Ingredients for making this hearty okra lentil soup

- Cumin Seeds

- Toor Dal / split yellow pigeon peas
- Water
- Juice of half a lemon
Substitutions:
- You can easily substitute sesame oil with coconut oil or olive oil, depending on your preference. Sesame oil adds a unique nutty flavor to the dish but it is not necessary if you don’t have any on hand. Whichever oil you choose, this quick and easy Instant Pot vegetarian okra lentil soup will sure to be delicious!
- If you don’t have split pigeon pea lentils on hand, you can easily substitute them with split yellow lentils or red lentils. Split yellow and red lentils are both high in protein and a great source of dietary fiber.
- You may also omit garlic, if you do not not like the flavor of it. If you do not have fresh garlic pods in hand, you can substitute it with 1 teaspoon of garlic powder or minced garlic that we get in the store.

To make this easy veggie soup, we start by adding cumin seeds to hot oil in the instant pot in saute mode. After the cumin seeds start giving out an aroma, we saute the onions and garlic for a minute.

This Vegetarian Okra Soup in Instant Pot is one of my favorite easy vegan soups. This one-pot soup is made with wholesome ingredients like okra, lentils, tomatoes, garlic and spices. Ingredients
2 teaspoons Sesame oil
1 tsp cumin seeds
garlic 2 cloves
½ Onion 120 gm
3 Tomato 130 gm
¼ kg Okra
Split pigeon peas/ toor dhal ¼ cup
Turmeric powder ⅛ tsp
Water 3 cups
lemon juice of ½ lemon
Instructions
- Turn on the instant pot and set it on high heat saute mode.
- Add sesame oil and when it becomes hot add cumin and roast it until the aroma of cumin seeds start coming out.
- Add the garlic cloves and onions and saute until the onions turn translucent.
- Add in the tomatoes and okra and turmeric powder and saute for 2-3 mins.
- Add the washed lentils to the instant pot.
- Add the water, give it a stir and close the lid of the instant pot.
- Pressure cook on high for 10 mins and release pressure after 10 mins
- After the pressure releases, blend the ingredients in an immersion blender or in a blender jar.
- Stir in the lemon juice and serve hot with a sprinkle of dukka or zatar or just black peppercorn powder.
